It is derived from naturally renewable resources.  It is lipophilic and used to form W/O emulsions.  For an O/W emulsion, it is commonly used in conjunction with its ethoxylated counterpart Polysorbate 80 (Tween 80®).  Sorbitan monooleate is a viscous, water-insoluble yellow to amber liquid with an HLB value of 4.3
